My school has the option for an "independent study", and for next year, I chose to do an independent study on advanced website development. I hope to cover topics such as HTML5, CSS3, and some advanced topics in Ruby on Rails, such as testing. I'm trying to find some good books on the subject that would be good for a classroom setting. By that, I mean that I'm looking for books that include things like end of chapter exercises/practice or ideas for projects that involve the covered topics. Do any of you have any suggestions for books like this?

your best bet is to go to a local college or university and just buy the classroom material there or find the equivalents at a book store. I do not know any off the top of my head but that would be my suggestion go talk to some people at a college or universtiy and get the classroom material best you can find probably.
